Ok, instead of an Eton Mess, or a marängsviss, I thought I'd make a Raspberry Mess, and boy, what a mess it is! :-D
Anyway, today was a very hot day. Too hot to cook anything. But perfect for ice cream!!!
My inspiration was the box of meringues I bought at Trader Joe's this past Sunday.
Here is the recipe:
- Meringues
- Raspberries
- Raspberry Preserves
- Heavy whipping cream whipped together with some coconut palm sugar (all I had in the house!) and vanilla extract (must buy more next time I go grocery shopping)
- Trader Joe's French Vanilla Ice Cream
Here was my process tonight:
Take out the small metal bowl. Is it clean? Wash it out with water and soap. Dry it with a paper towel.
Pour in 1/2 of the heavy cream in the bowl. Add a pinch or two of coconut palm sugar (boy, it's brown - will it make my whipped cream kind of euchre?).
Add what I think is 1 tbsp vanilla extract (I only measured with my eyes).
Whip the heavy cream without splattering all over the kitchen. I normally use the blender for this, but the o-ring on the blender broke and I haven't had a chance to get a new one, so the electric beaters will have to suffice here.
So, put the electric beaters in the heavy cream. Start it on the lowest speed. OK, minimal splatter, good.
But what I didn't count on was my 10-month-old puppy freaking out. Oops. So I had to calm her down. She got over her initial fear and came up looking at it. I am good! I can calm my puppy like a pro! Now she's all curious about it! I gave her a small treat (a piece of an ak-mak cracker) for coming up to me and even nearing the sound of the electric beaters. She's all good now!
Oops, I think I made the heavy cream into butter. Now what? Oh yeah, put the rest of the heavy cream in there! Hmm, now I have too much whipped cream. Oh well.
Take out a medium sized glass bowl. Is it clean? Wipe it out with a paper towel. Take out a small snack sized plastic bag. Put in 4 meringues in the bag. Close up the bag. Lay it flat on the countertop and smack the meringues with the palm of your hand. I promise you, a great de-stressor! Do this twice for a total of 8 meringues.
Put the crushed meringues in the glass bowl. Pour some of the whipped cream in the meringues. Fold gently. Add the raspberry preserves in the mixture. Fold gently. Take the French vanilla ice cream out of the freezer. Hmm. I have to let it defrost first. Put a few dollops of the ice cream in the glass bowl. Fold gently.
Take the raspberries from the fridge. Rinse them. Put them in the glass bowl. Fold gently. And that is how I came up with the mess of a picture! :-D
And now I'm enjoying a bowl of this heavenly raspberry mess! Yum!
