Monday, April 26, 2021 - Inspired recipe! One-pan chorizo pasta meal

 I bought some pork chorizo sausage last week. I had to use it up. So I decided to come up with this recipe:

1 lb farfalle pasta (bowties)

1 pork chorizo sausage (I used Cacique)

1 pint heavy cream

Enough milk to cover pasta in pan

1 Trader Joe's Mexican Style Roasted Corn with Cotija Cheese

Shredded Mexican cheese

Steps:

I put in some olive oil to a pan and sauteed the chorizo until cooked through. Then I added cream. I then added pasta and corn and noticed that I didn't have enough cream to cover the farfalle, so I added enough milk to cover and simmered for a while until pasta is al dente. Then I added the Cotija and the Mexican cheese and let them melt through. If you want, can always add sour cream to cool down the heat even further.

In Sweden we frequently cook macaroni in milk or heavy cream instead of in water. This is called (grädd)stuvade makaroner. Pasta simmered in milk or heavy cream instead of in water is delicious! Give it a try!

My review: Needed more chorizo or less pasta :-) Nice kick to the pasta. Enough to make my sinuses clear.
