My inspirations for baking and cooking are far and between. A recent NBC Dateline special on Prince William and Kate's wedding gave me the inspiration to make this cake: McVitie's Tea Biscuit Chocolate Cake. The program mentioned that Prince William had selected this to be his groom's cake. INGREDIENTS
4oz/110g butter
10oz/300g chocolate
14oz/400g condensed milk
Large packet of Rich Tea Biscuits or digestives or half of each
The original recipe also says that cherries, raisins and nuts are optional. I omitted the cherries, raisins and nuts. I'm not crazy about them.
First I broke the tea biscuits in quarters and put in bowl. Then I put in butter, condensed milk and chocolate and let them melt and meld together.
I then poured the chocolate mixture over the biscuits in the bowl. I got a pan and lined it with parchment paper and poured the chocolate mixture and spread it evenly. Then I put the pan in the freezer for at least 2 hours. It's really an icebox cake. You can put it in the fridge and let it chill for at least 3 hours or overnight instead. If you choose to freeze the cake, make sure you take it out of the freezer and into room temperature for 2 hours before serving.
I then cut the cake into a tiny piece. I brought the leftovers to my son's school and the chef there cut the cake into perfect one inch pieces. The cake was a big hit! I'll definitely make this again!
The original recipe also said that you were supposed to melt one half of the chocolate and reserve the rest for decoration of the cake. Oops, I did not do that. Maybe next time!
And I used two 100g bars of milk chocolate and one 100g bar of 70% cocoa dark chocolate bar. I might make this cake with all dark chocolate next time. At the same time, there was a nice balance of chocolate in the cake I made.
