Tonight's Dinner

Last Friday, my husband and I went to see 'The Muppets'. After we were done seeing the movie, we went to Applebee's for dinner. There my husband had spinach and provolone stuffed meatballs with marinara sauce and fettucine alfredo. My inspiration comes from this outing.

Tonight I decided to make stuffed mini-meatloaves.

I took a lb of Whole Foods 93% lean organic local ground sirloin, added one egg, and then I just went crazy. I didn't measure anything. I put in Heinz chili sauce, worcestershire sauce, horseradish mustard, sea salt, cracked pepper, oregano, shredded parmesan cheese. I only measured based on sight.

Then I took out my biggest dinner plate, split the meat mixture into quarters, took a quarter and flattened it out so it became thin. I put on some spinach and a slice of provolone cheese and rolled up the meat all around it. I ended up with 4 mini meatloaves and a tiny meatball. I brushed on a mixture of Heinz all natural ketchup, brown sugar and malt vinegar.

I put them all in a preheated 350 degree oven and let them cook for 40 minutes.

Meanwhile, I cooked up 2 lbs of cauliflower.

I mashed the cauliflower with butter, sea salt, pepper, and parmesan cheese.

The final dinner plate: 1-2 mini loaves, mashed cauliflower and spinach. Mmm!
