OK, so I used to have a groove in everything potluck. I seem to have lost that now. I have a potluck at work tomorrow, and during the whole weekend, I was at a loss as to what to bring to the potluck. I finally decided that I'd make something Swedish and something sweet. Said and done.
Luckily, my husband gave me a new cookbook yesterday. It just happened to be on my wish list that he doesn't know about. What serendipity! He got me a book on Swedish Cakes and Cookies
I decided to consult this book and see if I could find anything that fit the bill. I decided to make "chockladbollar".
For the entire recipe, please support the author by buying the book! I have omitted the measurements of the ingredients in the recipe...
butter
sugar
rolled oats
tbsp best cocoa, sifted
vanilla sugar or vanilla extract
cold strong brewed coffee
Garnish: pearl sugar and/or coconut flakes
Whip the butter, sugar and vanilla together until light and fluffy. [I had a hard time with this - next time I'll use the food processor instead of the handheld mixer and a bowl - the butter and sugar were flying everywhere! Oops.]
Add in the rest of the ingredients. Shape into small balls - there should be enough for 30 pieces. Roll the balls in a bowl of pearl sugar or in a bowl of coconut flakes.
I decided to make 15 balls with pearl sugar and 15 balls with coconut flake. Well, I ended up with 11 balls each with coconut flakes and pearl sugar. Maybe I made a few of the balls too big...
