Today, in Sweden, is Waffle Day. It's also the first day of spring. So I decided to make waffles today. I also got the inspiration from here: http://heavytable.com/vaffeldagen-waffle-day/ Yes, waffles are supposed to be heart shaped. Unfortunately, I do not have a Swedish waffle iron. I only have an American waffle iron, a Cuisinart. Waffles are also supposed to be served with whipped cream and fresh fruit. I had neither. I just ate them plain. I managed to eke out 6 waffles, perfect for our little family of 3, where we could get 2 waffles each. We'll see if my son will add syrup to his waffles! He adds syrup to the Swedish pancakes and Dutch Babies all the time, while I always have whipped cream and/or jam and/or powdered sugar and/or sugar. Waffles are served with whipped cream and berries, Swedish pancakes are served with sugar and jam, while Dutch Babies are served with lemon juice, powdered sugar and berries, like strawberries. Well, my son only puts on maple syrup on all those!
Anyway, here is the recipe, translated:
Crispy waffles
100g butter (7 tbsp butter)
3.5 dL flour (I have Swedish measuring cups at home, bought at IKEA about 15 years ago :))
2 dL milk
2.5 dL water
3 tsp baking powder
cardamom (optional)
salt (optional)
sugar (optional)
Melt butter in a sauce pan. Set aside and let cool. Mix baking powder and flour in a medium bowl. Add a bit of the milk to the flour and baking powder and mix until smooth. Add the rest of the milk and water and stir until smooth. Add any optional spices (cardamom, salt, sugar). Let rest for 20 minutes.
Heat a waffle iron. Pour just a bit more than 1 dL of the batter onto the iron. The batter should cover just enough. Close the lid. Bake until light turns green (my iron happens to have a ready indicator, which is awesome). Take out waffle with a chopstick. My waffle iron is non stick, so I didn't want to scratch the surface with a knife or a fork, so I used a chopstick instead. Place waffle on a cooling rack, so that it'll cool down and firm up and get really crispy, hence crispy waffles. Once cooked and cooled, place on plates and serve with whipped cream and berries or fruit. I managed to squeeze out 6 waffles. You may get more, you may get less. Varsagod!
Update: my husband added apple butter to his waffles! There is no limit to creativity with these waffles!
Update II: my son did indeed add maple syrup to his waffles!
I'll have to try these, especially since I still have all that apple butter on hand!
