Tonight's Dinner: STEAK SALAD!!!

For each plate:
Bunch of mixed greens
3 to 4 canned baby beets
blue cheese
walnuts
skirt steak, sauteed or grilled and sliced
orange bell pepper,  cut into matchsticks
Italian dressing
cucumbers, sliced and halved
manzanilla olives
avocado

I picked up a very small skirt steak from Whole Foods today. Only 3 something ounces. Only cost me about $3. One can afford meat if it's only going to be eaten as a "topping".

I also picked up a 3 lb container of mixed greens from Whole Foods. The usual container I'm getting isn't cutting it. I will now have to keep buying 3 lb containers :)

Directions:
Heat a grill (I don't have a grill :() or heat a cast iron pan with some olive oil. Pat the steak dry. Season with salt and pepper. Sear the steak, 5 minutes on each side, making sure to season each side before seared. Place steak on cutting board and let rest for several minutes. This is a good time to start composing the salad.

Rinse the salad mix. Place the greens in a big deep pasta bowl. We have 3 big deep pasta bowls. We used two tonight. So place greens in each bowl. Pour dressing over greens. Mix salad and dressing with clean hands.

Cut the orange pepper into strips. I started cutting the top and bottom cross wise first, but then I decided to cut the pepper lengthwise. Thought that was prettier, so I continued on with that. Put the peppers with the salad greens.

Top each salad with cucumbers, green olives (Manzanilla), blue cheese, avocado, walnuts and beets.

Slice the beef against the grain into thin slices. Top the greens with the beef. Thought it looked good with 3 to 4 slices of beef on each plate. I put the rest of the beef in the fridge for another day. Barely enough for another salad, but that's what you get for getting such a small piece of steak.

Very good! This salad is like "The sky is the limit!". Basics of a steak salad is: greens, blue cheese and steak. I decided to put in walnuts. Others put in pecans. This salad is limitless.

Sorry, no picture of tonight's dinner. It was simply too good.

  1. I LOVE steak salad. I agree, blue cheese is a necessary ingredient. Sadly, I'm the only person in my house who thinks this. That just leaves more blue cheese for me though!
