Recipe:
4 slices Canadian bacon, diced
1/2 can sliced mushrooms
1/2 bag frozen quartered artichoke hearts
4 eggs (I only had 4 eggs!)
cracked sea salt, to taste
cracked pepper, to taste
Italian seasoning, to taste
coconut oil
feta cheese
Preheat oven to 350. Fry bacon, mushrooms and artichoke hearts until heated through, seasoning with cracked pepper and cracked sea salt to taste, adding Italian spices to taste. Place 4 eggs in a bowl. Whisk them with pepper and salt to taste. Place a casserole in the oven for a few minutes. Take out casserole from oven. Put some coconut oil in casserole, letting the coconut oil melt. Make sure oil covers everything. Place bacon mixture in egg mixture, pour blended mixture in casserole pan. Sprinkle feta cheese on top. Place casserole in oven for 20 minutes, or until egg mixture sets.
