Respecting your food

Farmer's Market

Decided to go to the Farmer's Market today. Found a beautiful organic fresh chicken! It's now cooking in the oven with a compound butter, made with fresh basil and butter. Preheat the oven to 450 degrees, put in oven for 15 minutes, reduce the heat to 350 degrees, and let bake until thigh registers a temperature of 165 Fahrenheit. I sure hope I got the numbers right! There is nothing like buying a chicken at a farmer's market to make you really respect your food. I also asked tons of questions of the chicken farmer. Know where your food comes from.

Update: I decided to go with 450 degrees the whole way. About an hour and 15 minutes. It's golden and crispy. It's beautiful. Now it's cooling under an aluminum tent. I don't have a thermometer. I just gauged by looks, and it looks done to me. But who knows?
