It's now Christmas Eve. Food preparations are on in full force!
I've put a raw ham bone-in from Whole Foods in the oven at 170 degrees - I put allspice (preferably whole, but all I had was ground), whole cloves and whole black peppercorns on a big piece of aluminum foil and put the ham on there and wrapped the foil around the ham and put it in the oven at 170 degrees - the lowest my oven could go. Count one hour per pound. My ham is 4 lbs, so I estimate 4 hours. When the meat thermometer reads 70, ham is done. Problem is, I don't have a meat thermometer. Oops. So I have to go by time. I estimate that my ham will be done in roughly 4 hours.
Right now my brain is thinking in Swedish and English, so my English may not be my best in this blog entry. Yes, at times I get to be like the Swedish Chef in The Muppets! Gobble duoy gook! Agh!
Anyway, I am also making Swedish *Christmas* meatballs!
Ingredients:
2 lbs beef and pork mixture from Whole Foods
Breadcrumbs
Milk
Worcestershire sauce
Minced onions (dried)
Ginger (yes, ginger!)
coarse ground Black pepper
finely ground Sea salt
ground Cumin
ground Cardamom
ground Cinnamon
grated Nutmeg
ground Cloves
ground Allspice
In a small bowl, soak breadcrumbs and dried minced onions in milk and Worcestershire sauce. Stir. Add spices (I did pinches). Stir.
In a bigger bowl, place ground meats mixture. Add the contents of the small bowl into the meat.
To test the spices, take a little bit of the meat and fry it in a pan with butter.
This is teenager-approved! My 15-year-old son LOVED it!
Roll the meat into meatballs.
Fry the meatballs in batches in butter in pan over medium-high heat.
Serve with potatoes and lingonberry jam!
