The evolution of the breakfast stack...
So I wanted to make a breakfast sandwich on the go. But I'm gluten free, so I can't have English muffins.
So I thought, aha, I'll make the English muffin part out of hash browns. And the egg part? Well, I didn't have anything that could make round eggs, not even a microwave.
I was reminded of the egg rings my grandmother used to have, so I thought I'd go look for egg rings on the web, and I was re-introduced to using rings of pepper as egg rings. Wow, I like that!
Yesterday morning, I tried to make my breakfast stack. I failed miserably, as the pepper rings were too thin, and I didn't use enough hash browns, not to mention enough time.
This morning, I made the rings thicker, and I used more shredded potatoes and used more time. Success! This is something I'll definitely make again!
I put the pepper rings on a plate and let them cool and then I stacked them on top of each other and put ketchup between the top potato layer and egg layer.
Recipe:
1 bell pepper, sliced cross-wise in 1 inch thick slices
1 egg
Enough frozen hash browns to fill the pepper rings
Olive oil
Season to taste:
Salt
Pepper
Oregano and/or Basil
Directions:
Take a cast iron pan and place on medium heat and put in enough olive oil. Put in the pepper rings and stuff two of the pepper rings with shredded hash browns. Season with salt and pepper and/or oregano and/or basil. Let brown for 7-10 minutes. Turn the hash browns over. Season with the spices. Crack an egg in the third pepper ring. Season to taste. Let the hash browns brown for 5-7 minutes on the other side. Take the hash browns out of the pan and onto a plate. I like my eggs over hard, so I break the yolk and then turn over the egg so that the other side gets fried. Season with the spices. Let cook until cooked through. Arrange the rings with the poptatoes on a plate. Put the egg ring on the plate. Let cool. When cool to handle, place the first potato ring in the middle of the plate, then place the egg ring on top of the potato ring, put on some ketchup (optional), then place the potato ring on top. Pick it up with your hands. It will be a bit messy because of the olive oil, but it is sturdy. I took a bite of it, and it was delicious!
