Well, I have no tomatoes, no potatoes, but I do have chickpeas and cauliflower. And coconut milk!
So I was thinking - what can I do with those ingredients?
I decided to take out the cast iron pan and put some olive oil in it. Then I added mint, cumin, curry, ancho chili pepper, pepper, salt, and mango powder (amchur powder) to the oil, swirled the oil spice mixture around, put in a can of drained and rinsed chickpeas, and added a bag of frozen cauliflower. But I needed something saucy for the pan, so I decided to put in a can of coconut milk. Hmm, not bad!
Recipe:
1 can chick peas, rinsed and drained
1 bag frozen cauliflower florets
olive oil
mint
cumin
curry
ancho chili pepper
amchur powder (mango powder)
black pepper
sea salt
1 can full fat coconut milk
I added a couple of slices of cucumber and a few slices of orange and red pepper as decoration.
Really good! Would be good with some basmati rice, but I'm abstaining from rice right now.
I guess that's all the writing I can muster for tonight.
