Man tager vad man haver...

One of my favorite quotes. I've probably used it already in an earlier post on this blog. It means, "you take what you have". Kajsa Warg was the originator of that phrase. In this case, I had a pound of grass fed ground beef one day past its sell by date, some boiled potatoes, very little cheese left, and frozen mushrooms. All out of regular olive oil, so I have to use coconut oil and extra virgin olive oil.

Ingredients:
  • 1 lb grass fed ground beef
  • Boiled potatoes with peel on, cubed
  • 1 bag of Trader Joe's mushroom medley
  • Salt
  • Black pepper
  • Cumin
  • Rosemary
  • Basil
  • 1 cup Italian blend shredded cheese
  • Coconut oil
  • Extra Virgin Olive Oil

Optional:
Sour cream
Green veggies, like broccoli or brussels sprouts

Directions:
Preheat oven to broil (500° Fahrenheit).
In a cast iron pan on medium heat, put in some coconut oil. Put in the beef. Add pepper, salt, cumin and basil. Break up the beef and cook until cooked through.

Take a fork and put the cooked beef in a casserole pan. No need to drain the meat. Leave the juices in cast iron pan.

Take the potatoes and cube them. Put the potatoes in the cast iron pan and add extra virgin olive oil, salt, pepper and rosemary. Cook until browned on all sides. Take a fork and place potatoes in another bowl.

Put mushrooms in cast iron pan. No need to oil and/or season. Cook until done.

Put on top of beef in casserole pan.

Place the potatoes on top of mushrooms.

Sprinkle cheese on top of potatoes.

Place casserole pan in oven until cheese melts and is lightly browned, 5 to 10 minutes.

Take out of oven.

Let cool.

Serve with veggies and/or a bit of sour cream.

Yum. The spices do make a difference.

Husband approved. He absolutely loved this dish. He had 2 servings.
