Anyway, I didn't have milk, flour, etc., and I didn't feel like shopping or spending money today, so I simply whipped out the Trader Joe's Gluten Free Pumpkin Pancake Mix I've had since before Thanksgiving, unopened. I checked if it was still good. Still good! It had an expiration date of October 2015. I read the instructions on the back. Ok didn't need milk! Yeah! So I took out the Belgian waffle iron (alas, it's not Swedish - I need to put a Swedish waffle iron on my wish list - if one of my dear readers could get this for me, I'd be so forever grateful ;-)), plugged it in, put the butter in a pot and melted it on the stove, let it cool, whisked an egg and the melted butter together in a bowl, then added the water, and then the pancake mix. I sprayed the waffle iron with coconut oil, and spooned some of the batter in the iron, and closed the lid. When the light turned green, I picked the waffle up with a fork and put it on a plate to let cool. I managed to eke out 4 very small waffles from the directions on the package. I didn't use up the whole box, unfortunately.
I served the waffles with grade B make syrup and coconut palm sugar. Wish we had pumpkin ice cream, but it's out of season and we didn't have any, either.
I didn't think that lingonberry jam would work with pumpkin flavor, or would it?
Oh yeah, no whipped cream or ice cream, either. I was out of both. Go figure. Oh well.
Sometimes you gotta love having breakfast for dinner, or dessert for dinner!
