Smörgåstårta!

OK, so I've never made a smörgåstårta in my life before, as I think it's incredibly tricky to make. So I've never attempted this. However, I thought I'd translate this recipe into English upon a friend's request:

One looks down on the sandwich cake.

Why, I was wondering when I the other day was making a sandwich cake for a baptism. Personally I think that a sandwich cake is the optimal party dish. It is easy to prepare, there are lots of goodies in it, it is beautiful to look at, and it is great with some bubbly.

It tastes best if it is prepared the day before and decorated the day of. Emma and I got this recipe from one of our neighbors, Roffe. It only contains shrimp (or other shellfish that you wish to use).

An hour or so before you serve this, you'll have to do the most fun part of this. Decorate! I love to decorate all kinds of cakes, and use fresh flowers, herbs and ribbons. When it comes to sandwich cakes, is it fair and right to hint about what is in the cake by looking at the decorations. Here I've used black and orange roe, slices of lemon, and olives. The salad leaves I put all around and tie a bow with a light blue silk ribbon.

Mathe matique du sein gateau

This is what you need for a cake that gives about 10 pieces

8 slices longitudinal slices of white bread

Filling 1
1 dl mayonnaise
1 dl creme fraiche
2 tbsp finely chopped leeks
1 dl finely chopped cucumber (English)
2 tbsp unsmoked roe
2 tbsp cut dill

Mix everything together, and don't be stingy with anything! Everything goes in, with a bit extra and everything. Add pepper and taste. Add more roe/dill/pepper, etc., to taste. What's left after you've tasted goes into the fridge.

Filling 2
1 1/2 dl cream
1/2 dl creme fraiche
2 hg unpeeled Stockholm shrimp
2 avocadoes
2 tbsp finely chopped onion

If you didn't understand, peel the shrimp and onion before you chop it finely, the onion gets chopped into even smaller pieces.  Mix this with the lightly whipped cream  and add the creme fraiche.

Add lemon juice, freshly ground pepper, eventually a little salt, mix and taste. Add more according to taste. Fold carefully the finely chopped avocadoes
