I had baked two big sweet potatoes a coulple of days ago. Tonight I didn't just want to eat sweet potatoes, so I did some googling and got inspired by gluten free sweet potato gnocchi!
My recipe:
Two large baked sweet potatoes
1 egg
Trader Joe's Gluten-Free flour, to desired consistency

I peeled the potatoes, placed them in a medium sized bowl, added the egg, then mashed the potatoes together. You could use a food processor, but I needed to do some exercise!
I then added about 4 tablespoons flour, then got my hands all in there and mixed it up. I kept adding the flour until the dough did not stick to the bowl anymore. I kept adding a bit more flour a bit at a time until I could get it like play dough. Fun! I played with the dough until I was happy. It is play dough, after all. Cooking is supposed to be fun.
I then rolled out the dough into logs and used a plain old fork to cut the dough log into little pillows. I dropped them into boiling water until they floated to the surface.
I then drained the pasta, placed the pasta back into the pot and put some real butter over the pasta. I then took a small pan and melted butter and rubbed sage together until the butter browned. Mmmm! I drizzled that over the pasta, served the pasta into bowls and served with parmesan cheese. Mmmmm! Just look at the pictures!
Note to self: good idea to add salt and pepper to dough and salt to the water! Then again, the sage and browned butter and parmesan were nice additions to the pasta. Maybe it didn't need spices added before boiling. It's pretty plain without the butter, sage and parmesan cheese, so add these!
