Kokostosca and dinner

Everyone loved my kokostosca today.

For dinner I decided to make homemade meat sauce and tortellini.

I sauteed the meat in a cast iron pan until browned.

I simmered grated carrots, tri-color pepper strips, mushrooms and spices (salt, Italian seasoning, pepper) in another pan. I then poured in one can of tomato sauce, one can of diced tomatoes, and one 6 oz can of tomato paste, let that simmer for a good while, then I put the meat in there and let it simmer for a while longer. I boiled a pot of tortellini. Then I drained the tortellini and put the tortellini in the tomato sauce and let the mixture simmer a bit longer.

Meanwhile, I roasted 4 peppers in the oven so that I could have roasted peppers with my mozzarella sandwich that I'll have over the weekend or next week... I already have tons of leftovers and now I'm just trying to get through those leftovers, so no sandwich until those leftovers are gone! :-)
