4 potatoes, 4 parsnips, and 3 carrots, peeled and cut in uniform sizes. Boil in salted water until tender, about 20 minutes or so. Drain. Place in bowl. Mash with potato masher. Add pepper, salt and butter. Stir again.
I served these with Niman Farms Bratwurst and Bubbie's Sauerkraut, and of course with spicy mustard and ketchup. Not bad.
